Ingredients:
1 box whole-wheat rotini (or other small pasta)
1 pint grape tomatoes, halved (or cherry tomatoes, quartered)
1 cup chopped spinach
2 tablespoons olive oil
1 tablespoon balsamic vinegar
1 teaspoon basil
1 teaspoon minced garlic
1/2 pound shrimp, peeled, deveined, tails off
2 cups sliced mushrooms
Grated pecorino romano cheese
Directions:
Cook pasta according to box. Mix tomatoes, spinach, oil, vinegar, basil, and garlic in large bowl; let sit at room temperature 15 minutes. Saute shrimp and mushrooms. Toss with pasta and tomato mixture. Top with cheese. Serves 3-6, depending on appetite size.

It's the cheese that makes it. I usually spring for the fancy stuff in the deli, but the stuff in the spaghetti aisle is good, too.
